En este contexto de crisis generada por la decisión de recurrir a la cuarentena como medida preventiva, el sector gastronómico es uno de los más afectados. El rubro será uno de los últimos en funcionar plenamente tal como lo hacía previo al 20 de marzo, fecha en la cual se dio inicio al aislamiento obligatorio. En este marco, el sector sólo está exceptuado para vender a través del sistema de delivery, un servicio que no es el principal de los restaurantes y cervecerías, y que representa un ingreso menor.
En Santa Rosa algunos de los locales decidieron seguir con sus puertas cerradas hasta que la flexibilización los alcance y puedan reabrir al público, otros optaron por adoptar el delivery brindando su tradicional menú, y está el caso de la cervecería Black Bart que apostó a un nuevo modelo para afrontar la cuarentena: consiste en utilizar el sistema de delivery con una carta “low cost”, es decir, un nuevo menú a un precio inferior, más accesible.
“Decidimos hacer una carta especial de cuarentena abriendo también al mediodía, agregando pastas, platos calientes y re adaptando nuestras clásicas hamburguesas y pizzas, con otros precios”, dice Fernando González, uno de los dueños de Black Bart, que optó por reacondicionar la estructura de la cervecería para paliar la situación de anomalía que atraviesa. “La gente pide para salir del paso, además con estos precios y opciones también se ha sumado otra clientela que antes no teníamos. Ocupamos a algunos de nuestros empleados para que hagan el envío y sólo cobramos $50 cuando las cadeterías cobran $100. Si bien no llegamos a cubrir los gastos fijos que tiene un local como el nuestro, se puede decir que superamos las expectativas que teníamos”.
Black Bart tuvo que ajustarse a la actual situación. La cervecería contaba con 11 empleados antes de la cuarentena, hoy son sólo 3 los que están trabajando bajo este sistema de comida para llevar. “Esto nos ha afectado a todos, dueños, proveedores y empleados. A nuestros chicos le pudimos pagar el mes de marzo, luego les dijimos que íbamos estar sujetos a cómo se iban desarrollando las cosas. Nos inscribimos a los créditos disponibles y ahora estamos esperando poder acceder a ellos para cumplir con nuestras obligaciones y aguantar hasta que esto pase”, dice González al referirse a la situación de su personal, y sostiene que puede ayudar al resto de los empleados que no están en funciones con lo que el local está generando vía delivery. “Algunos de los chicos tienen hijos, alquileres que pagar. Es todo muy frustrante pero al menos ellos saben que tienen su comida todos los días, si bien son 3 los empleados que estamos ocupando, cocinamos diariamente para los 8 restantes, a su vez no dejamos de pagar las asignaciones y también podemos ponerle un peso en el bolsillo con lo que generamos o los ayudamos de alguna manera”.
El optimismo de los empresarios gastronómicos no es algo que abunda en estos días. Mantienen las expectativas pero la realidad les indica que va a ser muy complicado una habilitación total de la actividad al corto plazo. “Sabemos que no se va dar de forma inmediata una apertura al público para nuestro sector, pero confiamos que todo esté normalizado para encarar la temporada de manera plena en noviembre”, expresa el empresario gastronómico y advierte que esa reapertura será difícil de articular: “Es muy probable que cuando podamos abrir lo hagamos con la capacidad del local al 50%, y la verdad que la ecuación gastos fijos y empleados, no va a dar. Por eso es importante que se establezcan algunas pautas ya pensando en esa situación”, indica González
Por el momento la cervecería puede solventar algunos costos y dar asistencia a sus empleados con este nuevo modelo que, naturalmente, tanto sus dueños como los empleados, esperan que sólo sea momentáneo.
