El pasado miércoles 13 de mayo, el gobierno de La Pampa anunció nuevas medidas de flexibilización para comercios y la habilitación de quinielas e industrias, dando lugar a una mayor amplitud de actividades a casi dos meses del inicio de la cuarentena. La provincia es una de las jurisdicciones que pudieron acceder a un nuevo checkpoint y ya se encuentra en la denominada “fase 4” de este aislamiento social, preventivo y obligatorio. Una de las medidas anunciadas incluyó la nueva modalidad de venta para el sector gastronómico: el “take away”, o en términos criollos, el sistema “para llevar”.
Dentro del espectro de la actividad comercial, la gastronomía y negocios afines fué, es y seguirá siendo uno de los más afectados por las medidas restrictivas que ha impulsado el Estado para contener la propagación de la pandemia. Si bien los locales de comidas, bares y cervecerías estaban habilitados para poder realizar ventas por delivery, para muchos de ellos esto no representaba un modo viable para reactivar su negocio. Tal es el caso de uno de los locales gastronómicos más concurridos de la ciudad: la cervecería Bruselas, que optó por mantener cerradas sus puertas hasta esta nueva posibilidad que se abre con el “take away“.
“Nosotros no hicimos delivery porque no estábamos preparados para esa forma de comercialización. Nunca lo habíamos hecho, tampoco contábamos con el packaging, ni las botellas descartables. Encima en plena cuarentena había mucha demanda de descartables y resultaba difícil poder conseguir. Ahora esta nueva posibilidad de que la gente pueda pasar a buscar y llevar a su casa nos encuentra con todo lo necesario disponible”, dice Fernando, uno de los dueños de Bruselas.
Esta modalidad cuenta con un estricto protocolo confeccionado por gastronómicos basados en el instructivo diseñado por la FEHGRA, (Federación Empresaria de Hotelera Gastronómica de la República Argentina). El documento fue enviado al Ministerio de Salud de la provincia para que lo evalúe el área epidemiológica. Estos son algunos de los puntos principales del protocolo:
- Mantener los alimentos protegidos en todo momento: dentro de exhibidores, envueltos con film o en envases cerrados. Los contenedores de los alimentos deben estar en lugares alejados al tránsito del personal, para evitar la contaminación de partículas ambientales o cubiertas.
- El papel estraza o “craft” o film deben estar en lugares limpios y protegidos dentro de un contenedor.
- Los mostradores deben ser de material resistente a los productos de limpieza y desinfección de superficies.
- Dejar ventilar el sector antes de abrir o de cada servicio.
- Si dispone de maquina de cortar fiambre, la cuchilla, la base y las perillas deben ser limpiadas y desinfectadas luego de cada uso.
- Definir una zona específica para la entrega de pedidos con los espacios necesarios para que tanto el personal como los clientes puedan cumplir con las medidas de distanciamiento social y permita una adecuada distribución del flujo de despacho, asegurando la operatividad y prevención del riesgo de contagio.
- El personal que manipula los alimentos debe usar gorro tipo descartable, cubre boca-nariz y mentón realizar la higiene de manos con alcohol al 70%.
- El uso de guantes no está recomendado para la preparación de los alimentos pero si para el empelado.
El “take away” o “para llevar” nunca fue la atracción de cervecerías y restaurantes, justamente el atractivo es “salir a tomar algo” o “comer afuera”, pero en este contexto de covid-19 esta nueva modalidad será indispensable para que los gastronómicos puedan seguir con sus locales abiertos y mantener las fuentes de trabajo.
